So, here we are, the fifth, final and long overdue review my five part mini-series of Di’s Pies and it is, as mentioned in review four, the staple of most Pie Lovers top 5 pies, the humble, but ever so tasty Pork Pie.
This particular pie from Di’s bakery is of the hand raised variety, which is a skill in itself. Hot water pastry is normally the pastry of choice and usually includes the use of a Pie Dolly to shape the base and sides of the pie by applying pressure in a lifting and circular motion. With regard to the filling of pork, there are many variations, but personally I’ve found the most common is a combination of a small amount of belly pork and a larger portion of lean shoulder pork meat. Of course, seasoned to a “secret” recipe depending on the baker.
Anyway, onto the pie.
The pie was a perfect size for a snack or a treat while out walking the Yorkshire Moors. The pastry was reasonably uniform in thickness for a hand raised pie, and was your typical hot water variety. It cut well without crumbling too much and when picked up and eaten was just the right bite to be an enjoyable eat. There wasn’t much room for pie jelly, in fact I’m pretty none had been added after the oven cooking, but that’s not uncommon. The pork filling was still moist and a lovely colour of pink and there was a hint of white pepper in the tasting. The overall gastronomic experience was very satisfying.
I don’t know what it is, but hand raised pies just seem to have that something extra in the tase department. Maybe it’s just psychological, maybe I’ve become pre-condition over the years to prefer the hand-made pie rather than a more uniform perfectly round, perfectly straight sided pie, but whatever the reason, I love ‘em!
Finally, a word of thanks to Di for all her wonderful pies. Long may you continue to produce your fine fayre. I’ve had a great time reviewing all five pies I purchased and more importantly have loved eating each and everyone, but especially the Lamb & Potato Pie, that was spectacular, thank you.
