Pie: Corned Beef & Potato

I woke up this morning and had a hunger, a hunger for pie! That being the case I decided to seek out a pie bakery I’d not visited before and found what looked like a little gem near Halifax. When I arrived I was greeted by a very cheery and helpful lady, yes, it was Di herself. Di explained that all the stock from the shop was on sale in Brighouse Market, as it is each Saturday, so I jumped back into the car and headed over to Brighouse. The market at Brighouse is quite small and sadly as a sign of the times sparsely patronised, but one stall that was still busy was Di’s Pie stall.
There were several pies on display so I decided that a mini series of reviews was required. I purchased Corned Beef, Onion and Potato, Cheese and Onion, Lamb and Potato, Chicken in Gravy and of course a hand raised Pork Pie.
For the first of the reviews I’ll start with the Corned Beef (Bully Beef if you’re American), Onion and Potato Pie.
It’s been some time since I had a Corned Beef, Onion and Potato pie, in fact I think it was probably a plate pie that my mum made when I was in my early twenties, seems like a lifetime away now, especially after the last two years we’ve all had coping with the pandemic.
And onto the pie…..
The pastry was light, quite thin, and golden, but sufficiently sturdy to hold the filling without leakage. The filling was ample and a lovely combination of corned beef and potato seasoned well with a slightly peppery twang and of course the onion combining to make a delicious filling. The corned beef had sort of melted around the potato chunks and diced onion so each mouthful was full of flavour. This pie could easily have been taken and eaten cold as a snack on a hike or a ramble down the banks of the river Calder. A tasty pie that brought back memories of my youth, and yes I really can remember that far back, just about.
