Do you like to, or want to make your own pies? If you do, then here is one that is a little different from the traditional meat & potato or steak pies and is one that the family and I highly recommend.
This is a recipe taken from “The Hairy Bikers’ Perfect Pie Book”, and is a delicious creamy chicken, ham and leek pie. The pie itself is quite rich and creamy, so don’t expect to be losing any weight as a result of baking this pie. The filling of the pie is fully encased in an all-butter shortcrust pastry rolled thinly to ensure the pastry is light and crisp and the cream ensures the chicken and the ham are kept nice and moist making the whole pie very scrummy. It definitely leaves you wanting more, “yes, I’ll have just a small extra slice please”.
I have to confess that I cannot take the credit for actually making and baking this pie as that badge of honour goes to my wife who also makes a great homemade Meat & Potato pie, again a recipe taken from the same book.
To quote my wife, “When you initially see the ingredients and preparation needed, it can appear a little daunting”, but as the recipient, I can honestly say it is well worth her effort and cooking skills because the results are fantastic. Eaten hot straight out of the oven, or or cold from the refrigerator, this is a mouth-watering pie.
So, why not buy the book yourself, it’s available on-line and at all good book stores, and make one of the Hairy Bikers’ pies yourself? Go on, give it a try you won’t regret it.
